Right before we fill our bottles with beer, we add a little bit of pure yeast culture. The beer is then moved to warm chambers for several weeks to referment in the bottle. During this process, the yeast turns the remaining sugars into CO2 and alcohol, which is something you’ll really be able to taste. Thanks to this refermentation process, the beer gets an intense taste and more refined aroma.

During the maturation process that follows, the yeast sinks to the bottom of the bottle. Once the beer is ready to be poured, you can either pour out the yeast into your glass or leave it in the bottle. Many fans choose to drink the yeast last, because it offers a unique taste sensation. Ultimum optimum, save the best for last.
